Post harvest technology of fish has evolved in the last one decade to a more energy-efficient, cost-effective and quality upgrading technology. Since fresh fish can get spoiled very quickly, the development of technology for post-harvest preservation and methodology to convert fish to value added products have also become popular in recent times.
Fish harvesting system includes the components, fishing vessels (craft) and fishing gear. The term fishery vessels is used to denote the mobile floating objects of any kind and size operating in freshwater, brackish water and marine areas, used for catching, transporting, landing, preserving and/or processing of fish, shellfish and other aquatic animals. There are vessels performing other functions related to fisheries such as supplying, protecting, rendering assistance or conducting research or training.
Fish processing can be further subdivided into fish handling, which is the preliminary processing of raw fish, and the manufacture of fish products. Another natural subdivision is into primary processing involved in the filleting and freezing of fresh fish for onward distribution to fresh fish retail and catering outlets, and the secondary processing that produces chilled, frozen and canned products for the retail and catering trades.
